Squash, garlic and red pepper soup

    Very nice autumn seasonal soup. The squash and red pepper blend to a lovely colour, and the flavour is wonderful.

    Serves: 4 

    • 1 onion, chopped
    • olive oil
    • 3 garlic cloves, chopped
    • 1 small squash, peeled and chopped
    • 1 red pepper, chopped
    • 300ml chicken stock
    • 1 pinch salt and pepper

    Prep:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Cook the onion in a little olive oil until soft, add the garlic, squash and red pepper, cover and cook for 5 minutes.
    2. Add the chicken stock and simmer until the squash is soft, 25 to 30 minutes.
    3. Blend the soup, return to the pan and season with salt and pepper.
