Easy apricot compote

    This apricot compote is lovely with scones, toast, over yoghurt, with cake or simply on its own. Children love it as a snack. I have to admit that I like it too! Store in the fridge for up to a week, or freeze.

    Ingredients
    Serves: 4 

    • 500g ripe apricots, stones removed
    • 100g caster sugar
    • 100ml water

    Method
    Prep:10min  ›  Cook:20min  ›  Extra time:30min cooling  ›  Ready in:1hr 

    1. In a medium saucepan, heat the water on a low heat then add the apricots. Cook for 20 minutes.
    2. Add sugar before removing from heat. Let the compote cool down for at least 30 minutes and then serve.
