About this recipe: There is no need to season this dish with salt as the Serrano ham will take care of that. I like the combination of Serrano and fresh spinach, it is wonderfully savoury and delicious. You could try prosciutto or Parma ham instead.


Serves: 4 

  • 2 tablespoons butter, divided
  • 2 tablespoons dry white wine
  • 1 shallot, minced
  • 200g fresh spinach, washed and drained
  • 4 scallops
  • 4 slices Serrano ham
  • 4 wooden skewers
  • salt and pepper to taste

  1. In a medium saucepan on medium heat, add one tablespoon of butter, the white wine and shallot. Add spinach and then season to taste. Cook on low heat until the water has completely evaporated.
  2. Wrap each scallop with a slice of Serrano ham and secure with a wooden skewer.
  3. In a small frying pan on high heat, add the remaining tablespoon of butter and cook skewers for one minute on each side.
  4. Serve the scallops over the cooked spinach.
