Light prawn and avocado salad


    This is a regular dish on the menu of the bistro I used to go to for lunch. Things have changed and I no longer go there but I miss this dish so, from time to time, I make this recipe just for me. I just do a light version of the sauce but you can spice it up with some tabasco.

    Serves: 4 

    • 2 ripe avocados, stones removed
    • 100g cooked prawns
    • 2 tablespoons Greek yoghurt
    • 1 tablespoon tomato puree
    • a handful lettuce

    1. Dice the avocados. Add the avocados and prawns to a medium bowl. Mix the yoghurt and tomato puree in a small bowl. Pour the sauce over the salad and mix well. Serve with lettuce on the side.
