Muesli muffins

    A hearty muffin that is perfect for breakfast on the go! You can use any variety of muesli or even granola to suit your tastes. Experiment by using different brands and combinations. These muffins are freezer friendly.

    Makes: 8 muffins

    • 1 egg
    • 125ml milk
    • 125ml vegetable oil
    • 125g plain flour
    • 3 tablespoons caster sugar
    • 240g muesli or granola
    • 1/2 teaspoon salt
    • 3 teaspoons baking powder

    1. Preheat the oven to 200 C / Gas 4. Grease a muffin tin, or line with paper cases.
    2. Combine the egg, milk and vegetable oil in a measuring jug. Stir to combine.
    3. Combine the remaining dry ingredients. Make a well in the centre and add the wet mixture. Gently fold together until the dry mixture is moistened (do not over-mix; the mixture will be thick and lumpy).
    4. Fill muffin cases 3/4 full. Bake until golden, about 20 minutes. Immediately remove from the tin to cool.

    These are very easy to make but I will not be making them again! I halved the mixture and had enough to totally fill 6 muffin cases. They didnt rise atall. They would have burnt on top and not cooked in the middle if I hadn't turned the temperature down. When I tasted one I actually put the rest of it in the bin. I would not recommend making these to anyone. sorry.  -  25 May 2012


    Also confirm that it did not rise much, I added some sugar on top which worked well, if you like things sweet would suggest to add another spoon of sugar in the mixture. Healthy item and filling but not a light treat.  -  23 Oct 2013


    Very nice dont rise too much but still tasty! Makes about 10. Needed more sugar because I used no added sugar Muesli.  -  31 Jul 2013
