Preheat the oven to 200 C / Gas 4. Grease a muffin tin, or line with paper cases.
Combine the egg, milk and vegetable oil in a measuring jug. Stir to combine.
Combine the remaining dry ingredients. Make a well in the centre and add the wet mixture. Gently fold together until the dry mixture is moistened (do not over-mix; the mixture will be thick and lumpy).
Fill muffin cases 3/4 full. Bake until golden, about 20 minutes. Immediately remove from the tin to cool.
These are very easy to make but I will not be making them again!
I halved the mixture and had enough to totally fill 6 muffin cases.
They didnt rise atall. They would have burnt on top and not cooked in the middle if I hadn't turned the temperature down. When I tasted one I actually put the rest of it in the bin.

Also confirm that it did not rise much, I added some sugar on top which worked well, if you like things sweet would suggest to add another spoon of sugar in the mixture. Healthy item and filling but not a light treat. - 23 Oct 2013
