Mock Pecan Pie

    This tastes like pecan pie (and, you know how delicious THAT is!), but is less expensive to make because there are no pecans. But, you know, it has its own quite unique and excellent flavour, that even if you're one with the deep pockets you'll want them! By-the-bye, SO EASY: mix and bake. This is a war recipe.

    Makes: 1 pie

    • 300g sugar
    • 4 eggs
    • 225g butter, melted
    • 250g mashed pinto beans
    • 75g desiccated coconut
    • 2 teaspoons vanilla extract
    • 1 ready-made pastry case

    Prep:10min  ›  Cook:40min  ›  Ready in:50min 

    1. Mix all ingredients together well. Pour into pastry case.
    2. Bake in a preheated 180 C / Gas 4 oven for 40 minutes, or 'til golden-brown.
