Easy Christmas Fruit Cake

    This is a dense fruit cake, which is super-easy to make. Dried fruit is soaked in milky coffee, then mixed with sugar and flour, before being baked.

    Serves: 8 

    • 300ml milk
    • 300ml strongly brewed coffee
    • 1kg mixed dried fruit
    • 100g dark brown soft sugar or to taste
    • 125g self-raising flour

    Prep:15min  ›  Cook:1hr  ›  Extra time:8hr soaking  ›  Ready in:9hr15min 

    1. Soak the mixed fruit in the milk and coffee overnight.
    2. Preheat the oven to 150 C / Gas 2.
    3. To the soaked fruit, add the sugar and flour.
    4. Pour batter into a cake tin and bake in preheated oven for 1 hour or until a skewer comes out clean when inserted in the centre.
    5. Let cool before removing from the tin.

    So I followed it step by step as its my first time trying Christmas cake and it was a disaster. Not enough flour. So it didn't bake into a cake. it was a soggy mess. Next time, I strongly suggest adding at least 250g of flour.  -  24 Nov 2015


    Not a good outcome ,needs more flour and eggs. Just ended up with a sticky mess.  -  05 Nov 2017


    Lots more flour and an egg needed. Flour, sugar and soaked fruit do not a cake make. A wet, soggy, fruity mess was far more like it... I added cream and had it for dessert. Will try a different recipe.  -  17 Dec 2016
