Preheat the oven to 190 C / Gas 5.
Cut the bacon into small strips and place them in a frying pan. Cook until done. Cut and cut the leeks lengthways in half and then into very thin slices. Sauté the onion and the leeks in the fat and cool.
Grate the potatoes. Beat the eggs and combine them with the potatoes, leeks, bacon and onions. Add salt, pepper and nutmeg.
Spread in a baking dish and bake for 1 hour, or until nicely brown on top. Serve hot.
