Pour the milk in a shallow plate. Lightly beat the eggs and pour them in another shallow plate.
Spread 2 slices of bread with the plum jam. Sandwich together to make two sandwiches. Dip each toast sandwich into the milk and stack on a platter to drain.
Meanwhile, melt the butter in a large non-stick frying pan. Dip each sandwich into the eggs from both sides and fry until golden brown and crisp on both sides. Sprinkle with cinnamon and serve immediately.
