Plum French toast sandwiches

    This is a lovely twist on regular eggy bread. Two slices of bread are sandwiched with plum or damson preserve, then dipped in milk and egg and pan fried in butter till golden. A lovely weekend morning treat.

    Serves: 2 

    • 200ml milk
    • 3 eggs
    • 4 large slices white bread
    • 4 tablespoons plum jam or preserves
    • butter for frying
    • ground cinnamon for sprinkling

    1. Pour the milk in a shallow plate. Lightly beat the eggs and pour them in another shallow plate.
    2. Spread 2 slices of bread with the plum jam. Sandwich together to make two sandwiches. Dip each toast sandwich into the milk and stack on a platter to drain.
    3. Meanwhile, melt the butter in a large non-stick frying pan. Dip each sandwich into the eggs from both sides and fry until golden brown and crisp on both sides. Sprinkle with cinnamon and serve immediately.
