Mum P's Malt Loaf

    This is a firm family favourite and makes a nice tea bread spread with naughty butter. Everything is measured in cups which makes it easy if you don't have access to a pair of kitchen scales. You can use a coffee mug, or 250ml cup.

    Serves: 12 

    • 1 cup All-Bran cereal
    • 1 cup milk
    • 1 cup demerara sugar
    • 1 cup self-raising flour
    • 1 cup dried fruit

    Prep:15min  ›  Cook:1hr40min  ›  Extra time:12hr soaking  ›  Ready in:13hr55min 

    1. Mix together the All-Bran, milk, sugar and fruit, and soak overnight.
    2. Next day, add the flour.
    3. Put into a greased loaf tin and bake at 180 C / Gas Mark 4 for 1 hour 40 minutes, or until a skewer poked into it comes out clean.

    Serving suggestion

    Cut into slices and spread with a little butter for a tasty teatime treat.

    This recipe is one my mum used to make - it is so easy, although I do it slightly differently, by soaking just the all-bran with the milk for an hour until it is mushy, and then just proceed- it always turns out amazingly well. Moist and with far more flavour than you would think looking at the ingredients! I often half the sugar too, which doesnt seem to make a difference. Can also add mixed spice, 1 tsp, or nutmeg. Always leave it a day before eating. Keeps well, and freezes too. Try it, it rocks!  -  06 Aug 2011
