About this recipe: My version of the classic. Definitely for garlic lovers as it is quite strong. Use a nice crusty ciabatta roll or French bread.

Serves: 2 

  • 1 glug extra virgin olive oil
  • 1 large clove garlic, peeled and crushed
  • 40g butter
  • 1 pinch dried mixed herbs
  • chopped fresh parsley
  • 2 ciabatta rolls or French bread

  1. Make this about 1 hour before using. In a small saucepan heat the oil over a low heat. Add the garlic and stir constantly so as not to burn (Burning garlic is quite bitter). When the aroma is evident, add the butter and melt down.
  2. Immediately pour into a bowl then add the herbs and parsley. Stir well, cover and set aside. The butter will set.
  3. When ready to use, preheat a grill to medium heat. Slice the rolls or French bread in half. Stir the butter and spread evenly over the 4 halves. Place on a grill tray and toast for about 3 minutes being careful not the burn the bread. Serve immediately.

Make ahead

Make the garlic butter a couple of days in advance. Bring the butter to room temperature about half an hour before using.
