Crispy egg and lettuce salad

    My grandmother's salad recipe of eggs, onion and iceberg lettuce with a simple cream dressing. Truly delicious and nice served with grilled meats or a BBQ.

    Serves: 4 

    • 3 or 4 eggs
    • 1/2 head iceberg lettuce, finely shredded
    • 1 onion, thinly sliced
    • For the dressing
    • small tub single cream
    • 2 tablespoons malt vinegar
    • 1/2 tablespoon sugar
    • 1 teaspoon dry mustard powder
    • salt and pepper to taste

    1. Begin by boiling the eggs until hard-boiled. When cool enough to handle, peel and slice into quarters. In a glass salad bowl, alternatively layer the lettuce, onion slices and eggs.
    2. In a mixing bowl mix all the remaining ingredients for the dressing. Add more or less to your liking, then pour over the salad. Cover and chill until ready to serve.
