Apple, raisin and cinnamon muffins

    Delicious sweet apple and raisin muffins for all those muffin lovers out there . . quick and easy to make.

    Makes: 10 muffins

    • 225g (8oz) caster sugar
    • 170g (6oz) butter
    • 225g (8oz) self-raising flour
    • 1 teaspoon baking powder
    • 2 teaspoons ground cinnamon
    • 2 small sweet apples, cubed very small
    • 56g (2oz) raisins (optional)
    • 60ml milk
    • 2 eggs
    • 20g icing sugar

    1. Preheat the oven to 170 C / Gas 3.
    2. Put sugar and butter in a bowl and mix well until creamy but gritty feeling due to the sugar.
    3. Add in the flour, baking powder, cinnamon, cubed apple and raisins.
    4. Finally add in the milk and egg and mix very well until the mixture is creamy in texture and feels light, but not runny.
    5. Put mixture in muffin paper cases, about 4 heaped teaspoons per case, and put 6 to a baking tray. If they are too close, they spill over and join onto the next muffin in line.
    6. Place in preheated oven until a skewer inserted near the centre comes out clean, about 20 minutes.
    7. Sprinkle icing sugar on the top to decorate.
