Ed's sweet bread pudding

    A bread pudding that is both easy to make with storecupboard ingredients and a delight for kids, or cut into small squares for casual dinner party desert bites.

    Makes: 12 servings or more bite size pieces

    • 10 slices day old bread or 4/5 rolls, top crust removed
    • 1 tin evaporated milk (Ideal® or Carnation®)
    • 1 tin water
    • 200g caster sugar
    • 1 packet Carmelle® Flan powder or similar
    • 4 eggs, free range preferably
    • 1 knob butter for greasing dish
    • 1 cinnamon stick, ground
    • 1 whole nutmeg, ground

    1. Preheat the oven to 150 C / Gas 2.
    2. Cut bread crust off. Soak in a large bowl with milk and water. Add sugar, carmelle flan powder and eggs.
    3. Grease 20cm square oven proof dish with butter. Spread mixture (fairly fluid consistency but don't worry) onto dish. Top with cinnamon and nutmeg to taste.
    4. Bake in the preheated oven for about 1 hour until a skewer inserted near the centre comes out clean.
    5. Allow to cool, dust with more cinnamon and if desired, a bit of sugar, and cut into handy bite sized bits on its own or alternatively, serve with your favorite cream or custard. Yummy and dead easy!
