    About this recipe: Relatively healthy spicy grilled chicken sandwich with rocket, red onion and cheese in a piri piri yoghurt dressing. Instead of the ciabatta roll, you can use a Turkish bread bap, and instead of Jarlsberg cheese, you can choose Gouda.

    Ingredients
    Serves: 2 

    • 1 chicken breast, sliced lengthways in half
    • 1 small pot low fat natural yoghurt
    • Nandos Piri Piri Sauce, to taste
    • 2 ciabatta deli rolls, cut in half
    • 1/4 to 1/2 red onion, sliced
    • 2 slices cheese (preferably Jarlsberg)
    • handful rocket leaves

    Method
    Prep:5min  ›  Cook:10min  ›  Ready in:15min 

    1. For best results use a sandwich press or grill items separately.
    2. Heat the deli press or pre-heat the grill and cook the chicken until cooked through.
    3. Meanwhile, mix the yoghurt pot with piri piri sauce to taste. This will be the dressing which is a much healthier alternative to mayonnaise.
    4. Grill or toast the bread lightly.
    5. Assemble the sandwhich with rocket first, chicken, cheese and then red onion slices. Dollop generously with the dressing. Serve.
