Preheat oven to 190 C / Gas mark 5. Grease and flour a 23x12cm (9x5 in) loaf tin.
Beat the eggs and sugar thoroughly. Add the anise seed, then mix in the flour. Scrape dough into the prepared loaf tin (it will only be about 1/2 full).
Bake for about 20 minutes or until a cocktail stick inserted in the centre comes out clean. Remove from pan and slice into 16 slices. Place slices on a baking sheet and bake for 5 minutes until bottom is browned. Turn and bake for another 5 minutes until the other side is browned.
This recipe is great! No fat and you can reduce suger if you want to, and that's what iloved about it.you MUST add vanilla. easy and quick.I substituted anise seeds for ginger.It came out good - 21 Nov 2011
Used different ingredients.
Texture is real nice. A good dunking toast. A little less flavourful than I would prefer, but I am a huge fan of Anise. I also made this recipe using Almonds and Almond flavouring and they were terrific also. - 21 Jul 2008
