These were SO good! I love making chocolates, but am always concerned about the amount of fat in using double cream to make the ganache (which is the standard way). Using creme fraiche is genius! You still get that rich, smooth , velvety taste and texture. Cannot recommend highly enough!
I also varied the recipe, split it into smaller batches before adding the coffee, and swapped the coffee for orange flavouring, mint flavouring, caramel flavouring and amaretto to replace the coffee! - 12 May 2014
