400g plain flour
500g apples, very finely chopped

Beat together eggs, salt and sugar. Mix in milk and 30g melted butter. Add flour and mix into a smooth dough. Fold apples into the dough.
Bring a large pot of water to the boil. Take two tablespoons of dough and shape a "test" dumpling. Cook the dumpling in simmering water, if it doesn't break apart, the dough is ready. If it does break apart, you need to add more flour.
Form all dumplings, place into pot with barely simmering water and cook for 15 minutes. Remove from water drain well. Pour some melted butter over dumplings and sprinkle with cinnamon and sugar.
