Apricot Filled Biscuits

    These buttery biscuits are the perfect Christmas treat. Lightly spiced, heart shaped biscuits are sandwiched together with apricot jam. You can cut the biscuits into any shape you prefer.

    Serves: 60 

    • 100g cold butter or margarine
    • 50g dark brown soft sugar
    • 1 egg
    • 1 teaspoon vanilla extract
    • 100g hazelnuts, ground
    • 250g plain flour
    • 2 teaspoons bicarbonate of soda
    • 1 teaspoon gingerbread spice
    • apricot jam for the filling
    • chocolate icing to decorate

    1. Place butter, sugar, egg, vanilla extract, nuts, flour, bicarbonate of soda and gingerbread spice into a food processor. Process until the dough comes together. Cover and chill for 1 hour.
    2. Preheat oven to 180 C / Gas 4.
    3. Roll out dough thinly and cut into heart shapes (or any shape you prefer).
    4. Pass apricot jam through a sieve. Spread a little jam on half of the cut out biscuits. Top with another biscuit to form a sandwich.
    5. Transfer biscuits onto a baking tray and bake in preheated oven for 12-15 minutes. Let cool slightly before decorating with chocolate icing, if desired.
