Baked Apples with Ginger

    A wonderful fruit dessert that's quick and easy to prepare. Apples are stuffed with almonds and crystallised ginger, before being baked with ginger juice. They are the perfect low fat treat during Christmastime.

    Ingredients
    Serves: 4 

    • 4 medium apples, washed and dried
    • For the Filling
    • 3 tablespoons ground almonds
    • 1 teaspoon caster sugar
    • 1 knob butter
    • 2 pieces crystallised stem ginger, cut into small strips
    • 2 tablespoons ginger juice

    Method
    Prep:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Mix almonds, sugar and butter. Set aside.
    2. Preheat oven to 230 C / Gas 8. Grease baking tray or ovenproof dish.
    3. Core apples and stuff with the almond mixture. Place the ginger pieces in the openings of each apple. Sprinkle with ginger juice.
    4. Place apples in prepared tray/dish and bake in preheated oven about 30 minutes. Serve immediately.

    Ginger juice

    Finely chop (or blitz in a food processor) fresh ginger root. Place into a tea towel and squeeze out the juice.
