Chilli chocolate truffles

    The flavour combination of chilli and chocolate has been around since the 1600s. If you add just the right amount of chilli to these chocolates, it will enhance the flavour considerably. Try not to be too heavy handed. Start with 1/2 teaspoon chilli, taste and then adjust if required.

    Serves: 20 

    • 500g dark chocolate
    • 80ml cream
    • 1 teaspoon chilli powder or to taste
    • 40g butter

    Prep:15min  ›  Cook:5min  ›  Extra time:6hr setting  ›  Ready in:6hr20min 

    1. Chop 2/3 of the dark chocolate coarsely.
    2. Bring the cream and chilli powder to the boil. Add dark chocolate and melt while stirring to a smooth mixture. Add butter and stir again.
    3. Pour the mixture into a buttered rectangular baking dish; leave to set completely.
    4. Remove the set chocolate from the dish and cut out desired shapes (simple shapes are best).
    5. Melt the remaining dark chocolate and leave to cool again. Coat the cut-out chocolates with the melted chocolate and let set.

    My husband loves anything chilli, so these went down a treat. I followed the advise in the last review and doubled the amount of chilli - to be honest, next time I'm going to add more again! I found it difficult to shape after setting, so I remelted it and poured into an old ice cube tray. Worked perfectly!  -  24 Jul 2011
