Chocolate and marzipan shortbread

    These buttery biscuits are flavoured with marzipan and cocoa and then dipped in chocolate. They make the perfect treat anytime of the year. Pack them up in cellophane bags for a wonderful food gift.

    Makes: 100 biscuits, depending on size

    • 50g marzipan
    • 2 small eggs
    • 250g butter, softened
    • 200g plain flour
    • 175g cornflour
    • 40g unsweetened cocoa powder
    • 150g caster sugar
    • 1 pinch salt

    1. Preheat oven to 170 C / Gas 3. Line a baking tray with baking parchment.
    2. Crumble the marzipan. Separate 1 egg and mix the yolk with the marzipan.
    3. With electric mixer add the egg white, a whole egg, butter, flour, cornflour, cocoa, sugar and salt. Beat well.
    4. Transfer batter into a piping bag with large star nozzle. Pipe "O's" onto the baking tray and bake for 12 minutes in the preheated oven. Allow to cool.
    5. Melt some chocolate covering according to package instructions and decorate the biscuits with it.

    Dark chocolate cake covering

    Can be replaced by cooking or eating chocolate, however, the finish will not be the same.
