Jam drop biscuits

    These buttery biscuits are rolled in ground hazelnuts and filled with strawberry jam. Feel free to use any jam you prefer. You can also try them with Nutella or peanut butter.

    Makes: 40 biscuits, depending on size

    • 250g butter, softened
    • 125g caster sugar
    • 1 teaspoon vanilla sugar
    • 2 eggs
    • 350g plain flour
    • To Decorate
    • 3 tablespoons ground hazelnuts
    • red jam, such as strawberry or raspberry

    1. Beat butter until fluffy and gradually add the sugar, vanilla sugar and eggs. Sieve in flour and fold in. Chill for at least 30 minutes.
    2. Form small balls from the biscuit dough and roll in ground hazelnuts. Make a hollow into each ball with the end of a wooden spoon and place onto a baking tray lined with baking parchment.
    3. Fill the holes with jam and bake in a preheated oven at 170 C / Gas 3 for 20 minutes.

    They came out fine They actually taste nice. In the future I would leave them to chill for longer so it would make it easier to spoon them out. But other than that, they are yummy YAY  -  03 Mar 2012


    Ok I have just put them in the oven. I don't think this recipe is right, the dough was very sticky and didn't go into balls, it was also impossible to get a whole in the middle to put in the jam. I reckon it all should have been rolled into a dough and chilled for a lot longer than 30 minutes. I will tell you how they turn out!!  -  03 Mar 2012
