About this recipe: These delicious biscuits are gluten-free and dairy-free. They are the perfect Christmas biscuit that can be enjoyed anytime of the year.


Makes: 10 

  • 4 egg whites
  • a few drops lemon juice
  • 300g icing sugar
  • 2 teaspoons ground cinnamon
  • 350g ground almonds or other nuts
  • edible rice paper
  • ground nuts for dusting

  1. Beat egg whites until very stiff. Add a few drops of lemon juice. Sift icing sugar and fold in one spoonful at a time. Remove 3-4 tablespoons of the mixture for the glaze and chill.
  2. Add the cinnamon and ground almonds to the remaining mixture.
  3. Preheat oven to 170 C / Gas 3.
  4. Dust a work surface with ground almonds. Roll dough out to a thickness of 0.75-1cm. Cut out star shapes, place onto rice paper and then transfer to a baking tray. Brush evenly with glaze.
  5. Bake in preheated oven for about 12-15 minutes.

Can be purchased in speciality kitchen/baking shops or online.
