Sweet buttery biscuits are sandwiched with a layer of marzipan, glazed and topped with pistachios. Cut out the biscuits into any shapes you prefer. Enjoy with tea, coffee or a glass of milk.
Work all the biscuit ingredients into a smooth dough. Shape into a boil, wrap in foil and chill for 1 hour.
Preheat oven to 180 C / Gas 4. Grease and line a baking tray with baking parchment.
Roll out the dough on a floured surface. Use a pastry/cookie cutter to cut into the shapes you desire. If you're making different shaped biscuits, make sure you have pairs of each.
Transfer onto prepared baking tray and bake in preheated oven for 10-15 minutes.
Meanwhile, knead marzipan with icing sugar and rum. On a sugar-dusted surface, roll to 3mm thickness. Cut out the same shapes as the dough, but only half as many.
Brush the finished biscuits with jam. Place one piece of marzipan between two biscuits and press together.
Make a glaze with the icing sugar, liqueur and some water . Brush the biscuits with this glaze and sprinkle with chopped pistachios.
