Viennese Sandwich Cookies

    These shortbread biscuits are buttery, sweet and oh-so-delicious. They are stuck together with redcurrant jelly, you can of course use any flavour jam you prefer.

    Makes: 55 biscuits

    • 250g butter, softened
    • 125g caster sugar
    • 2 teaspoons vanilla sugar
    • 2 eggs
    • 2 egg yolks
    • 250g plain flour
    • 150g cornflour
    • redcurrant jelly

    Prep:20min  ›  Cook:10min  ›  Extra time:1hr cooling  ›  Ready in:1hr30min 

    1. Preheat oven to 190 C / Gas 5.
    2. Beat butter with sugar and vanilla sugar until fluffy. Stir in eggs and egg yolks. Sift together flour and cornflour and fold in.
    3. Place into a piping bag and pipe small "O's" onto a greased baking tray. Bake in preheated oven for 10 minutes until golden brown.
    4. Allow to cool and stick each biscuit to another with jelly. Allow to set and store in tins.

    Even though the chocolate in the photo isn't part of the recipe, I melted some plain chocolate and dipped the biscuits in them. They tasted delicious and looked very professional.  -  08 May 2011
