Mushroom and parsley salad

    A wonderfully fresh-tasting salad. Mushrooms are drizzled with a parsley and olive oil dressing. Use a wide range of mushrooms for the best flavour and texture.

    Serves: 4 

    • 300g mixed fresh mushrooms, cleaned and thinly sliced
    • 1 lemon, juiced
    • 1 bunch flat-leaf parsley, finely chopped
    • 1 egg yolk
    • 1 clove garlic, pressed
    • 150ml olive oil
    • salt and freshly ground black pepper.

    1. Drizzle mushrooms with a little lemon juice.
    2. Beat egg yolks with salt, pepper and lemon juice. Stir in garlic, then drizzle in olive oil whilst constantly stirring. Mix in parsley. Season dressing to taste and drizzle over mushrooms.
