Italian Apple Cake

    This easy cake and quick to throw together. It's deliciously tender and is packed full of fruity goodness. Enjoy warm with ice cream, cream or custard.

    Makes: 1 cake

    • 100g butter, melted and cooled
    • 2 pods vanilla, seeds scraped out
    • 250g caster sugar
    • 2 eggs
    • 100g plain flour
    • 2 teaspoons baking powder
    • 1 pinch salt
    • 100ml milk
    • 900g apples, peeled, cored and thinly sliced
    • butter for greasing

    1. Preheat oven to 190 C / Gas 5. Grease and line a round 30cm springform cake tin.
    2. Beat together eggs and sugar until light and fluffy. Stir in butter. Fold in flour, baking powder, vanilla seeds, salt and milk. The batter should be quite runny.
    3. Fold in apples and pour into prepared tin. Bake in preheated oven for about 30 minutes. Cover with foil, so the top does not burn and bake for an additional 15 minutes.

    This recipe is pretty good. My apple cake turned out very tasty indeed. Very sweet, and the vanilla compliments the apple perfectly. Note, that if you use a 30cm tin, this comes out very flat, like a pizza. Well, it did for me. It is pretty easy to prepare, although peeling and slicing the apples takes patience. The thinner the apple slices the better, so best use a potato peeler or similar, rather than a knife.  -  05 Sep 2012
