Oaty Lace Cookies

    These biscuits are crisp, sweet, oaty and very buttery. They are simple to make and everyone will love them. Enjoy them with tea or coffee.

    Ingredients
    Makes: 60 

    • 250g butter, at room temperature
    • 200g caster sugar
    • 200g dark brown soft sugar
    • 50g plain flour
    • 1 pinch salt
    • 1 teaspoon baking powder
    • 1 large egg or 2 small eggs
    • 225g porridge oats
    • 1 dash vanilla extract

    Method

    1. Beat butter and sugar together until fluffy. Gradually stir in remaining ingredients until well incorporated.
    2. Preheat oven to 180 C / Gas 4. Grease two non-stick baking trays.
    3. Form small balls of 2-3cm diameter using a spoon or your hands. Place on prepared baking tray, leaving plenty of room between them to spread.
    4. Bake in preheated oven for 10-15 minutes, depending on the size. Allow to cool slightly and then gently lift them off the tray with a spatula. Leave to cool and harden completely on a wire rack.
