    About this recipe: A delicious thin buttery biscuit, which is highly versatile. You can dress these morsels up or down, according to your preference. Try sandwiching them together with melted chocolate, jam or simply dust with icing sugar.

    Makes: 80 biscuits

    • 500g plain flour
    • 250g butter, softened
    • 250g caster sugar
    • 2 eggs
    • 1 lemon, zest grated

    Prep:25min  ›  Cook:15min  ›  Extra time:2hr chilling  ›  Ready in:2hr40min 

    1. Work all the ingredients into a dough and wrap in cling film. Chill for 2 hours.
    2. Preheat oven to 180 C / Gas 4. Roll dough out thinly on a floured surface. Cut out into desired shapes.
    3. Bake in preheated oven for 10-15 minutes (after the first tray, the baking time is shorter). Let cool and decorate, if desired.

    It was ok, only made a few biscuits. we made then quite big but only just got 10 biscuits out of it! was a little sticky too. not sure if i did something wrong. - 22 Dec 2011
