    About this recipe: It's amazing how a few ingredients can create such a wonderful appetiser. Mushrooms are stuffed with chorizo, garlic and shallots, then baked. Simple and delicious. They're the perfect finger food for any dinner party.

    Ingredients
    Serves: 4 

    • 400g large button mushrooms (about 16)
    • 200g chorizo sausage
    • 2 cloves garlic, finely chopped
    • 3 tablespoons olive oil, divided
    • 2 shallots, finely chopped
    • salt
    • freshly ground black pepper
    • sweet paprika to taste

    Method
    Prep:30min  ›  Cook:15min  ›  Ready in:45min 

    1. Preheat oven to 200 C / Gas 6. Generously grease ovenproof dish with olive oil.
    2. Clean mushrooms and remove stems. Chop stems finely. Remove skin of chorizo and finely chop.
    3. Heat 1 tablespoon oil in a frying pan and sauté shallots until soft and translucent. Add mushroom stems, chorizo and garlic and sauté over medium heat. Season with salt, pepper and paprika.
    4. Fill mushroom caps with the stuffing and place in prepared dish stuffing-side up. Bake in preheated oven for 10 -15 minutes. Serve warm.

    Deliciously simple! The only change I made was to sprinkle some manchego cheese over the mushrooms before cooking (any cheese would work though). Served alongside a peppered steak and baby veggies. So adatable too! - 05 May 2012

    I have to go off of my husbands rating (unfortunately I am not a mushroom fan). I didn't have chorizo, so I used regular sausage and added some extra spices. He really enjoyed these and the only change he would make is mixing the sausage with the other ingredients more. The stuffing mixture turned out crumbly and was difficult to contain in the mushrooms. - 12 Aug 2011
