Easy peasy apple cake

About this recipe: This cake is quick and easy to throw together. It's tender, well-flavoured and packed full of apples. Serve with a dusting of icing sugar, whipped cream, ice cream or custard.


Serves: 12 

  • 100g unsalted butter
  • 100g caster sugar
  • 1/2 teaspoon vanilla extract or cinnamon
  • 2 eggs
  • 150g plain flour
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 100ml milk
  • 900g apples, peeled, cored and thinly sliced

  1. Melt butter and allow to cool slightly. Beat butter, sugar, vanilla sugar, eggs, flour, baking powder, salt and milk with a whisk into a smooth batter.
  2. Finally stir in apple slices.
  3. Preheat oven to 190 C / Gas 5.
  4. Pour batter into a greased pie dish and smooth out the top. Bake in oven for 30 minutes, then cover with baking parchment/foil and bake for a further 15 minutes.

I loved the simplicity of this recipe and the fact that there are quite a lot of apples to cake in the ratio. However it was quite soggy. Maybe a higher temperature or leave it uncovered? Less apples? Any suggestions would be appreciated. - 06 Oct 2013
