Cinnamon Star Biscuits

About this recipe: These gluten-free biscuits are easy to make and taste fantastic. They are sweet, nutty and deliciously spiced. Enjoy with a cup of tea or coffee.


Serves: 25 

  • 300g blanched almonds
  • 4 small egg whites
  • 250g icing sugar
  • 1 teaspoon ground cinnamon
  • 1 lemon, zest grated
  • sugar for rolling

  1. Finely grind the almonds in a food processor.
  2. Beat egg white until stiff, then gradually beat in icing sugar.
  3. Set aside 3-4 tablespoons of the mixture in the refrigerator.
  4. Fold the cinnamon, almonds and lemon zest and into the beaten egg whites and chill for 1 hour.
  5. Preheat oven to 160 C / Gas 2. Line a baking tray with baking parchment.
  6. Sprinkle work surface with sugar and roll out dough about 5mm thick. Cut out stars and place on prepared baking tray.
  7. Coat stars with remaining egg white mixture and bake in preheated oven for 15-20 minutes.
