Cinnamon Star Biscuits

    These gluten-free biscuits are easy to make and taste fantastic. They are sweet, nutty and deliciously spiced. Enjoy with a cup of tea or coffee.

    Serves: 25 

    • 300g blanched almonds
    • 4 small egg whites
    • 250g icing sugar
    • 1 teaspoon ground cinnamon
    • 1 lemon, zest grated
    • sugar for rolling

    1. Finely grind the almonds in a food processor.
    2. Beat egg white until stiff, then gradually beat in icing sugar.
    3. Set aside 3-4 tablespoons of the mixture in the refrigerator.
    4. Fold the cinnamon, almonds and lemon zest and into the beaten egg whites and chill for 1 hour.
    5. Preheat oven to 160 C / Gas 2. Line a baking tray with baking parchment.
    6. Sprinkle work surface with sugar and roll out dough about 5mm thick. Cut out stars and place on prepared baking tray.
    7. Coat stars with remaining egg white mixture and bake in preheated oven for 15-20 minutes.

    A Christmas favourite this year, in our house. Nice and easy for the children to make and rewarding as they taste so yummy. They don't stay in the tin for long! We added mixed spice to the biscuit recipe and a tablespoon of lemon juice to the icing.  -  31 Dec 2016
