Chocolate Butter Fingers

    These decadent biscuits are perfect for everyday snacking, as well as special occasions, such as Christmas. Buttery almond biscuits are sandwiched together with jam and then dipped in chocolate.

    Serves: 30 

    • 200g butter
    • 120g icing sugar
    • 4 egg yolks
    • 1 teaspoon vanilla sugar
    • 40g ground almonds
    • 220g plain flour
    • To Decorate
    • any tart jam
    • chocolate cake covering, melted

    1. Beat butter until fluffy, then stir in sugar. Gradually beat in egg yolks and vanilla sugar. Add ground almonds and flour. Stir well.
    2. Line a baking tray with greaseproof paper and preheat oven to 180 C / Gas 4. Place batter into a piping bag and pipe small fingers onto tray. Bake in preheated oven for 10-15 minutes or until golden brown.
    3. Allow biscuits to cool. Heat jam and use to stick two fingers together, then dip halfway in chocolate. Let set.

    Chocolate cake covering

    Can be substituted for eating chocolate, however, the finish will not be the same.
