Walnut biscuits

    These biscuits are buttery and nutty with just the right amount of sweetness. Feel free to substitute in any other nut you prefer. Enjoy with a cup of tea.

    Makes: 80 biscuits

    • 200g butter
    • 100g icing sugar
    • 1 egg yolk
    • 1 pinch salt
    • 100g walnuts, coarsely chopped
    • 300g plain flour

    1. Preheat oven to 180 C / Gas 4.
    2. Beat butter until fluffy. Stir in icing sugar and beat in egg yolks until smooth. Season with salt and knead in the walnuts and the flour.
    3. Shape dough into 4cm diameter rolls and press square with a flat object. Wrap and chill for 1 hour, then cut into 5mm thick slices.
    4. Lay biscuits on a non-greased baking tray. Bake for 10 minutes at 180 C / Gas 4, then reduce the oven temperatre to 130 C / Gas 1/2. Bake for a further 5 minutes. Watch that the biscuits don't burn.

    Surprisingly easy! I made them with pecans this time but I liked the walnut ones I made with friends better. I’ve used butter substitute for my lactose intolerant husband - 175C for 7min and 130C for 5min worked well for this.  -  17 Jan 2018
