I have tried to make White Chocolate truffles 3 times now from 3 different recipes but it doesn't work! My plain chocolate truffles are always great, but white chocolate ones never thicken enough to make into truffles. I think there is something about the texture or density of white chocolate that makes it impossible to work! It always stays runny and gloopy, even with added sugar, chocolate, frozen for a while etc. Stick with plain chocolate ones and don't bother with white chocolate, it simply does not work!  -  23 Dec 2013
