About this recipe: I was looking on this website to make a spicy chicken dish with couscous but was unable to find anything so I decided to come up with my own. I made it for my boyfriend and a friend; they both loved it.

Serves: 3 

  • 1 tablespoon olive oil
  • 3 chicken breast fillets, cut into strips
  • 1 red chilli, chopped
  • 1 green pepper, chopped
  • 1/2 onion, chopped
  • chilli powder to taste
  • 2 teaspoons honey
  • 1 Knorr® Chicken Stock Pot
  • 3 teaspoons hot chilli sauce
  • 3 tablespoons Levi Roots® Reggae Reggae Jerk BBQ Sauce
  • 1 packet Ainsley Harriott's® Spice Sensation couscous

  1. Heat up the oil in a frying pan or wok at a medium heat; once heated add in the chicken with 1 slice of chilli, 1 slice of pepper and a few of the chopped onions to flavour the chicken. Sprinkle in some chilli powder.
  2. Once the chicken is browned, add in the rest of the chilli, pepper and onions. After a few minutes add in the honey and coat the chicken and veg with it. Then drop in the chicken stock pot and let it melt and mix it around the chicken and veg. Now add in the hot chilli sauce and let it simmer for a couple of minutes before adding in the Jerk sauce. Mix around well and then turn the heat down low and let it simmer for 10 minutes. Add in chilli powder to taste.
  3. Whilst the chilli chicken is simmering we can prepare the couscous. Put the couscous mix into a bowl and add 240ml of boiling water, make sure all the mix is coated, then let it sit for 5 minutes. Fluff the couscous around with a fork. This should now be ready to serve. Instructions for the couscous should be on the back of the packet anyway if you get stuck.
  4. Portion out the couscous and top with the chilli chicken mix. I served it with a nice seedy sunflower bread on the side. Enjoy!
