About this recipe:
Delicious, tasty, fun to make! Your kids will love these homemade chicken nuggets, which are so much healthier than frozen or shop bought. Serve with your favourite dipping sauce of choice.
100g fresh breadcrumbs
zest of 1 lemon
15g flat leaf parsley, finely chopped
3 to 4 chicken breasts, depends on how hungry, sliced thickly
1 egg, beaten
dipping sauce to serve

Preheat the oven to 220 C / 200 C (fan) / Gas 7.
Mix together the breadcrumbs, lemon zest and parsley. Dip the chicken pieces into the egg, then the breadcrumbs, pressing them onto the chicken.
Place the chicken on a baking sheet and drizzle over the olive oil. Cook for 15 minutes or until the chicken is cooked through and the outsides are golden.
Serve the chicken immediately with salad, chips and some dipping sauce. Substitution
You don't have to have the chips, keep it healthier, or maybe another potato option, such as - potato roasties, etc.
Cut down the amount of chicken, take away the chips and you can serve it as lunch.
