Dad's speciality-veg stuffed chicken breasts

    It's rolled up chicken breasts stuffed with asparagus and red peppers. It's what my Dad makes for a special dinner. I absolutely love it and I'm willing to share for others to try.

    Serves: 4 

    • 4 chicken breast fillets
    • 4 asparagus spears
    • 4 peppers
    • salt and pepper to taste
    • olive oil

    Prep:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Preheat the oven to 200 C / Gas 6.
    2. Wash the chicken. Wash the veg and cut them up into strips.
    3. Season the chicken and veg with salt and pepper.
    4. Lay the chicken flat and place the veg in the middle of the chicken. Roll in the two ends of the chicken into the middle or let them overlap each other, and stick a toothpick through to hold.
    5. Brush the chicken and veg with olive oil and season again if you wish. Place the chicken rolls on a baking tray lined with greaseproof paper.
    6. Bake until the chicken is no longer pink at the centre, about 30 minutes.

    Use for leftovers

    Make a sandwich from the leftovers and roast! yum.

    Serving suggestion

    Some roasted loose baby potatoes go nicely with it.

    This was extremely simple and yet tasty. I would suggest chicken breasts are flattened out prior to trying to stuff the strips of pepper and asparagus inside as it was a bit of a struggle to get the chicken to hold together once all the ingredients were in. Did this for Sunday lunch with all the trimmings and it went down a treat yet was very light and healthy. Good job!  -  19 Jan 2013
