Quick and Easy Fruit Cake
A deliciously quick and easy fruit cake using St Helen's Farm goats' milk products.
Ingredients
Serves: 6
- 100g (4 oz) St Helen's Farm goats' butter
- 100g (4 oz) soft brown sugar
- 2 eggs, beaten
- 100ml St Helen's Farm goats' milk
- 225g (8 oz) self raising flour
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 275g (10 oz) dried mixed fruit

- Preheat the oven to 170 C/ Gas Mark 3. Grease and line a 2lb loaf tin.
- Allow the butter to soften then beat it with the sugar until light and creamy.
- Sift together the flour and spices.
- Gradually stir the milk, eggs and flour and dried fruit into the butter and sugar mixture. Mix well.
- Place in the tin and make a slight hollow in the middle.
- Bake for about 45 minutes or until firm to touch.

This is very easy to make and tastes great! I didn't have self raising flour so added one tsp of bicarb to plain flour. Came out really lovely and soft. - 13 Aug 2011
Something else. Used dried mixed fruit, plus a handful of leftover cranberries from Xmas baking, and also some past-their-sell-by Medjool dates. Should have baked it for longer than 45 minutes as it is a bit uncooked in the middle. - 14 Jun 2011
