Makes: 3 dozen

  • 100g margarine
  • 220g dark brown soft sugar
  • 1 egg
  • 125ml pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 190g plain flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 75g desiccated coconut

Prep:15min  ›  Cook:10min  ›  Ready in:25min 

  1. Preheat oven 190 C / Gas 5. Grease baking trays.
  2. In a mixing bowl, cream margarine and sugar until fluffy. Beat in the egg, syrup and vanilla until well mixed.
  3. Combine flour, baking powder and salt. Add flour mixture to the creamed mixture. Stir in coconut. Drop by tablespoonfuls 5cm apart onto prepared trays.
  4. Bake in preheated oven for 10-12 minutes.

Mine spread out and together and stuck to the baking parchment. Couldn't peel them off. What I was able to salvage (broken fragments) however tasted scrummy. Is the proportion of four correct? - 06 Dec 2011
