Ham and Cheese Pasta Salad

    This salad has the perfect combination of flavours and textures. Pasta is tossed with ham, spring onions, grapes and Cheddar in a creamy dill dressing. It's the perfect summer salad to be enjoyed anytime of year.

    Serves: 8 

    • 75g farfalle (bow-tie) pasta
    • 125ml mayonnaise
    • 125ml soured cream
    • 2 tablespoons cider vinegar
    • 1 1/2 tablespoons Dijon mustard
    • 1 teaspoon caster sugar
    • 1/2 teaspoon ground black pepper
    • 1/4 teaspoon dried dill
    • 1/4 teaspoon salt
    • 325g seedless green grapes, halved
    • 225g diced ham
    • 50g chopped spring onions
    • 200g mature Cheddar cheese, diced

    1. Cook pasta in a large pot of boiling water until al dente. Drain and rinse in cold water.
    2. In a small bowl, mix together mayonnaise, soured cream, cider vinegar, mustard, sugar, black pepper, dill and salt.
    3. In a large bowl, combine pasta, grapes, ham, spring onions and cheese. Toss with dressing. Cover and chill overnight or for at least 6 hours.

    I'm having a ladies luncheon on Saturday. The problem I have is they are all great cooks and have all tried every new recipe. I found this recipe to be something totally different. I know they'll just love it. I never serve anything new until I've tried it first. I have to say that this is wonderful! I increased the amount of dressing as others suggested; and anyone who knows me, knows I just have to add a cup of celery. I also left out the cheese and increased the grapes adding red as well as green. Oh my, how wonderful! I'm excited to have found a recipe that none of my friends have yet!
