Toffee Almond Bars

    A super-sweet and buttery snack that's a cinch to make. Digestive biscuits are topped with flaked almonds and a butter-sugar mixture before being baked. The resulting bars are chewy, fudgy and super-sticky.

    Makes: 48 bars

    • 12 digestive biscuits
    • 100g flaked almonds
    • 175g butter
    • 150g dark brown soft sugar
    • 1 teaspoon vanilla extract

    Prep:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Preheat oven to 180 C / Gas 4. Grease a 25x38cm or similar sized swiss roll tin.
    2. Break digestive biscuits into 4 pieces and arrange them touching on the prepared tin. Sprinkle with almonds.
    3. In a small saucepan, melt butter. Stir in dark brown soft sugar and vanilla until smooth and remove from heat.
    4. Pour mixture over the digestive biscuits and bake for 8 to 10 minutes in the preheated oven. Watch carefully so that the edges do not burn.
    5. Cut bars while still warm and remove from tin. If the bars are stuck, put the tin into the warm oven for a minute to loosen.

    these are great and pretty easy to make. Not by any means healthy though. I really couldn't bring myself to use more than 1 stick (1/2 cup) of butter and it turned out really well.     This was one of the easiest recipes I have ever made. I don't like to bake and this turned out so simple and successful. I was so pleased.I used a bag of silvered almonds that I bought and had in the house. I thought it tasted like a toffee bar. It was a pleasure to have something turn out so good and no hassle.
