Simple Chocolate Chip Cookies

About this recipe: These cookies are buttery, chewy, chocolately and oh-so-delicious. One cooke will never be enough! Enjoy with a big mug of tea, coffee or a glass of milk.


Makes: 3 - 4 dozen

  • 225g butter
  • 100g caster sugar
  • 220g dark brown soft sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 310g plain flour
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon salt
  • 335g plain chocolate chips

  1. Preheat oven to 190 C / Gas 5.
  2. In a large bowl, cream together the butter and sugar until smooth. Beat in the vanilla and eggs one at a time. Combine the flour, bicarbonate of soda and salt; stir into the sugar mixture. Finally, mix in the chocolate chips. Drop heaped tablespoons onto ungreased baking trays.
  3. Bake for 8 to 10 minutes in the preheated oven or until edges are golden. Remove from baking tray to cool on wire racks.

Really lovely! I made a batch to take to school and the tin was clear by second period, with people requesting more. The brown sugar gave them a wonderful almost toffee-ish taste. Next time, I think I would add more chocolate chips and possibly a little cocoa powder to the dough, just to make them a little more chocolatey. (I also used half and half smarties and chocolate chips, which seemed to be appreaciated ) - 10 Apr 2011


I only had one egg so halved everything but accidentally used a tablespoon of vanilla extract instead of a teaspoon. Whoops! Nevertheless, the cookies still tasted amazing and I think my belly is asking for a third already! Very basic to do as I'm a beginner baker and I'm very happy with the outcome. Being the pessimist I am, I was expecting my horrid baking skills to ruin this poor recipe. A must-try! - 11 Feb 2013
