300g caster sugar
1 1/2 teaspoons vanilla extract
440g plain flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons bicarbonate of soda
3/4 teaspoon salt
350ml soured cream
1 1/2 (395g) tins apple fruit filling, such as Hartley's
120g chopped walnuts
4 tablespoons caster sugar
1/2 teaspoon ground cinnamon

Preheat oven to 180 C / Gas 4. Lightly grease or line two 12-hole muffin tins.
In a large bowl, cream together butter and 300g sugar. Beat in eggs and vanilla. Combine flour, baking powder, bicarbonate of soda and salt. Stir into the creamed mixture alternately with soured cream. Fold in apple fruit filling and walnuts. Spoon batter into prepared muffin tins. Combine 4 tablespoons sugar and cinnamon; sprinkle over the muffins.
Bake in preheated oven for 16 to 18 minutes, until a skewer inserted into the centre of a muffin comes out clean.
