    A foolproof recipe for the most incredible tasting muffins. They are sweet, cinnamony and packed full of apple and walnutty goodness.

    Ingredients
    Makes: 24 muffins

    • 175g butter
    • 300g caster sugar
    • 3 eggs
    • 1 1/2 teaspoons vanilla extract
    • 440g plain flour
    • 1 1/2 teaspoons baking powder
    • 1 1/2 teaspoons bicarbonate of soda
    • 3/4 teaspoon salt
    • 350ml soured cream
    • 1 1/2 (395g) tins apple fruit filling, such as Hartley's
    • 120g chopped walnuts
    • 4 tablespoons caster sugar
    • 1/2 teaspoon ground cinnamon

    Method

    1. Preheat oven to 180 C / Gas 4. Lightly grease or line two 12-hole muffin tins.
    2. In a large bowl, cream together butter and 300g sugar. Beat in eggs and vanilla. Combine flour, baking powder, bicarbonate of soda and salt. Stir into the creamed mixture alternately with soured cream. Fold in apple fruit filling and walnuts. Spoon batter into prepared muffin tins. Combine 4 tablespoons sugar and cinnamon; sprinkle over the muffins.
    3. Bake in preheated oven for 16 to 18 minutes, until a skewer inserted into the centre of a muffin comes out clean.

    I used one large cooking apple little sugar and a drop of water instead of tined apples and part cooked them after chopping to about 10mm square I got very good reports for these muffins  -  22 Apr 2015

    These were great! I didn't have any walnuts, but they still came out wonderful. I found that the recipe made about 28 muffins and that it took me a lot longer to cook them than I was expecting. I thought the oven ought to be a little hotter. They were wonderful right from the oven and then cold later. Yum!!     The best muffins I ever made. I did add 1 tsp. cinnamon to the batter and used Jumbo muffin pans. The baking time then inceases to 30 minutes.  -  05 Mar 2001  (Review from Allrecipes US | Canada)
