Apple Raisin Cake

    A super easy cake, which is quick to throw together. It's flavoured with apple sauce, cinnamon, cloves and raisins. Enjoy as a snack, for afternoon tea, elevenses or pop into packed lunches. You can also use this recipe to make cupcakes or muffins.

    Serves: 12 

    • 150g raisins, coarsely chopped
    • 200g plain flour
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground cloves
    • 1 teaspoon salt
    • 110g butter, softened
    • 200g caster sugar
    • 1 teaspoon bicarbonate of soda
    • 250g unsweetened apple sauce

    1. Preheat oven to 180 C / Gas 4. Grease and flour a 23cm square tin. In a medium bowl, combine raisins and flour. Add cinnamon, cloves and salt. Set aside.
    2. In a large bowl, cream butter and sugar until light and fluffy. Dissolve bicarbonate of soda into apple sauce and mix into creamed butter. Add flour mixture. Mix until smooth.
    3. Pour batter into prepared tin and bake in preheated oven for 40 to 50 minutes or until a skewer inserted into centre of cake comes out clean.

    Altered ingredient amounts. Line bottom and sides of baking tin with parchment paper, otherwise it will be difficult to get the cake out of the tin.  -  12 Dec 2010


    Very good cake, almost like a sticky cake. I lined sides and bottom of the baking tin with parchment paper and was glad I did otherwise it would have been difficult to get it out of the tin. It is easy to make and the taste is wonderful. Well worth making!  -  12 Dec 2010


    I have nothing but positive things to say about this recipe!! It's great!! I omitted the raisins (unfortunately, my family does not care for them like I do) and spread cream cheese frosting overall. OHHHH sooo good!!
