About this recipe:This chicken dish is packed full of delicious Italian flavours. Chicken breasts are stuffed with tomatoes, basil, oregano, artichokes, peppers and mozzarella, before being baked in marinara sauce.
4 tablespoons olive oil
4 fresh tomatoes, diced
3 tablespoons chopped fresh basil
2 tablespoons chopped fresh oregano
6 tinned artichoke hearts, drained and chopped
2 red peppers, chopped
225g mozzarella cheese, cubed
6 skinless, boneless chicken breast fillets, pounded to 5mm thickness
500g marinara sauce, such as Buitoni

Heat oil in a frying pan over medium heat. Add tomatoes, basil, oregano, artichokes and red peppers. Cook until just hot, then remove from heat. Transfer to a large bowl and toss with mozzarella cubes.
Preheat oven to 180 C / Gas 4. Lay out the pounded breasts and spoon filling onto the centre, leaving 2.5cm on each side. Adjust filling as you roll so as not to over stuff. Place chicken seam side down into a 2-litre baking dish. Cover with marinara sauce. Cover with foil.
Bake in preheated oven for 35 to 45 minutes in or until chicken is cooked through.
