About this recipe: This recipe makes a versatile cake base, which is perfect for birthdays or any other occasion. Try topping it with sweetened whipped cream, cream cheese icing or chocolate ganache.

Serves: 18 

  • 400g caster sugar
  • 250g plain flour, sifted
  • 3 egg yolks
  • 1 egg
  • 125ml buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • 100g margarine
  • 250ml boiling water

  1. Mix together the buttermilk and bicarbonate of soda. Set aside. Cream margarine, sugar, eggs and vanilla. Beat well. Stir in buttermilk and bicarbonate of soda mixture.
  2. Sieve dry ingredients and add to creamed mixture. Add boiling water and mix well.
  3. Pour into a greased and floured 20x30cm tin. Bake at 180 C / Gas 4 for approximately 35 minutes or until skewer inserted into the centre comes out clean. Let cool.
