Sausage stew

    This hearty stew is simple to make and absolutely delicious. Sausages are simmered with yellow squash, courgettes and mushrooms in a tomato sauce. Enjoy with mash, pasta or rice.

    Makes: 6 

    • 450g mild Italian sausages, cut into 2.5cm pieces
    • 160g chopped onion
    • 1 tablespoon finely chopped garlic
    • 2 yellow squash, thinly sliced
    • 2 courgettes, thinly sliced
    • 2 carrots, thinly sliced
    • 150g sliced fresh mushrooms
    • 2 (400g) tins whole plum peeled tomatoes
    • 2 tablespoons grated Parmesan cheese

    1. Cook the sausage with onion and garlic in a large, deep frying pan or pot over medium heat, until the meat is browned, 10 to 15 minutes, stirring frequently.
    2. Mix in the yellow squash, courgettes, carrots, mushrooms and tinned tomatoes, reduce heat to medium-low and bring the mixture to a simmer.
    3. Cook, stirring occasionally, until the vegetables are tender, about 20 minutes. Sprinkle with Parmesan cheese and serve.

    Yellow Squash

    Are available at speciality markets. If unavailable, use courgettes.

    This is DELICIOUS! A great summer recipe. The only thing I did differently was to slice the zucchini and squash thickly (maybe 1/2 inch) so that they keep a little bit of crunch to them.     This is a very delicious dish. I used sweet Italian poultry sausage and did include the carrots and mushrooms. I also added some salt and pepper. It is different enough from my other Italian dishes to be a nice change. Hubby and I really enjoyed it!
