About this recipe:
This hearty stew is simple to make and absolutely delicious. Sausages are simmered with yellow squash, courgettes and mushrooms in a tomato sauce. Enjoy with mash, pasta or rice.
450g mild Italian sausages, cut into 2.5cm pieces
160g chopped onion
1 tablespoon finely chopped garlic
2 yellow squash, thinly sliced
2 courgettes, thinly sliced
2 carrots, thinly sliced
150g sliced fresh mushrooms
2 (400g) tins whole plum peeled tomatoes
2 tablespoons grated Parmesan cheese
- Cook the sausage with onion and garlic in a large, deep frying pan or pot over medium heat, until the meat is browned, 10 to 15 minutes, stirring frequently.
- Mix in the yellow squash, courgettes, carrots, mushrooms and tinned tomatoes, reduce heat to medium-low and bring the mixture to a simmer.
- Cook, stirring occasionally, until the vegetables are tender, about 20 minutes. Sprinkle with Parmesan cheese and serve.
Are available at speciality markets. If unavailable, use courgettes.
