Lentil and vegetarian sausage soup

    A hearty soup, packed with lentils, smoked vegetarian sausage, onion, cabbage and tomatoes.

    Serves: 4 

    • 2 tablespoons olive oil
    • 200g brown lentils
    • 1 small onion, chopped
    • 60g finely shredded cabbage
    • 1 clove garlic, crushed
    • 2 vegetarian smoked sausages, diced
    • 1 (400g) tin chopped tomatoes
    • 2 vegetable stock cubes
    • 1 5/8 pints water
    • 1 bay leaf
    • 1 teaspoon thyme leaves
    • 1/2 teaspoon cayenne pepper
    • salt and pepper to taste

    1. Heat oil in a large saucepan over medium heat. Stir in lentils, onion, cabbage and garlic; cook until tender. Stir in sausage and tomatoes. Crumble vegetable cubes over mixture and pour in water. Stir in bay leaf, thyme and cayenne. Bring to the boil; cover, and simmer until lentils are tender, about 30 minutes. Season with salt and pepper to taste.

    Did not put any sausage,but taste was amazing  -  22 Oct 2017


    Throw everything into a crock pot. That's what I did and it came out wonderful. The only only only difference is that I used 6 cups of chicken stock vs the 4 cups water and 2 bouillon cubes and 2 cups of shredded cabbage. We came home to delicious hearty soup thick soup.     I used turkey smoked sausage and didn't have head cabbage, but used a portion of a bag of 3-color slaw I had (which is mostly shredded cabbage anyway). I used half the cayenne and it was still plenty spicy for my taste and petite diced tomatoes. Hearty, good soup...I will make this again.  -  30 Nov 2006  (Review from Allrecipes US | Canada)
